Almond Bar Cookies

This is my go to cookie recipe for any Christmas cookie exchange because I know that no one else will have this type of cookie.  They are crisp cookies with sliced almonds on top which is then drizzled with icing.  What could be better than that!  They are not very hard to make and look and taste awesome so you won't want to wait until Christmas to make these.


Cookie Ingredients
1 3/4 c. flour
2 t baking powder
1/4 t salt
1/2 c margarine
1 c sugar
1 egg
1/2 t almond extract
milk
1/2 c. sliced almonds, coarsely chopped

Almond Icing Ingredients (Stir ingredients together adding milk until drizzling consistency)
1 c. powdered sugar
1/4 t almond extract
3-4 t milk

Stir together flour, baking powder and salt in a bowl.  In a different large mixing bowl beat margarine until softened.  Add sugar, beat until fluffy.  Add egg and almond extract and beat well.  Add flour mixture and beat until well mixed.  Divide dough into fourths.  Form each into a 12" long roll.  Place 2 rolls 4-5" apart on an ungreased cookie sheet.  Flatten each roll until 3" wide.  Repeat with remaining rolls on a another cookie sheet.  Brush flattened rolls with milk and sprinkle with almonds.  Bake in a 325 degree oven for 12-14 minutes or until edges are lightly browned.  While cookies are still warm cut them crosswise at a diagonal into 1" strips.  Remove from cookie sheets & cool.  Drizzle with almond icing.  Makes 48 cookies.
